Koorka Upperi | Chinese Potato Stir Fry

Spicy and delicious Kerala style Korrka Upperi

There is no need to explain about the taste of koorka to a Malayali. Kooka is also known as Chinese potato/seppakezhangu which is a seasonal root vegetable. Koorka is very famous for its distinct aromatic flavor. This Koorka upperi is a common traditional side dish we used to serve with rice in Kerala. There is no special ingredients needed to make this dish. Only the complicated part is the cleaning ,but when you taste this dish surely you will forget the effort you have taken to clean it 😉 . 250g of Koorka
4-5 no of shallots or 1 no of onion
6-7 no of garlic cloves
1/2 spn. of chilli powder
A handful of curry leaves
1/4 spn. of mustard seeds
1 spn. of oil
Salt as required

Preparation Steps

Step 01

Wash,clean and cut koorkka into small cubes. Cook it along with 1/2 glass of water and salt.(5 minutes in pressure cooker)

Step 02

Crush shallots and garlic using grinder.

Step 03

Heat oil in a pan

Step 04

Splutter mustard seeds.

Step 05

Add crushed shallots and garlic mix, curry leaves.Fry for 1-2 minutes till golden brown color.

Step 06

Add chilli powder and saute for 1 minute.

Step 07

Add cooked koorka and mix well. Fry for 1 minute.

Step 08

Serve hot.
