A delicious south Indian dish.The lemon in the rice aids in the absorption of iron in your body due to its high vitamin C content.
You can prepare this dish when you are travelling or in a hurry.You can have this for lunch or dinner.Enjoy the tanginess of lemon with rice.
Slice all the vegetables in to 1 1/2 inch piece.
1/4 kg of Basmati rice/Unboiled rice
1 no of Lemon
1/4 spn. of Pepper powder
Salt to taste
1/2 spn. of Oil
1/4 spn. of Mustard seeds
1 small piece of Ginger
2 tbsp. of Peanuts
1 tbsp. of Chana Dal
1/2 spn. of Urd Dal
1/4 spn. of Turmeric powder
1/6 spn. of Asafoetida
4 no of Red chillies
2 springs of Curry leaves
Cook basmati rice drain well and keep aside.
Heat oil in a pan.
Splutter mustard seeds. Then add chana dal,urd dal red chillies and curry leaves.
Reduce flame;add turmeric powder and asofoetida and stir well for 1 min.Do not change the turmeric color. Remove from flame.
Add this seasoning to rice and mix well.
Take juice from lemon(Remove lemon seeds).
Mix rice with lemon juice .Add salt and mix well and serve.
You can use any type of dals; or you can make this rice without using peanuts and dal.
Change quantity of lemon juice as per your choice.
