Mint Rice | Pudina Rice
Flavorful rice with mint and lemon
Pudhina rice or mint rice is an simple and easy to make rice dish. Perfect combination for this mint rice is plain yogurt. Mint is a good source of Protein, Thiamin, Niacin, Vitamin B6, Phosphorus and Zinc, Dietary Fiber, Vitamin A, Vitamin C, Iron, Magnesium, and Potassium. Mint is also good for cold and cough. We can also make Mint chutney,Mint vada etc… with this wonderful leaf. The best combination for mint rice is mixed vegetable raita. Hope you all will like this recipe.

2 cup of of pulao rice/biryani rice/sona masoori
2 cup of chopped Mint leaves
1/2 of one lemon
1 no large onion
6-7 no of shallots
1 small piece of ginger
3 no of garlic cloves
3 no of green chillies
1 spn. of fennel seeds
3 piece of bay leaves
2 no of cinnamon sticks
Wash and soak rice in water for 15 minutes.
Gently crush mint leaves along with shallots,green chillies,garlic and ginger. Keep aside.
Heat oil in a pan. Add all the ingredients mentioned under whole spices. Fry till they become fragrant.
Add sliced onion and fry till it become golden brown color.
Add crushed mix and fry for 2-3 minutes.
Add soaked rice and mix well. Add lemon juice and salt. Mix well and fry for 2-3 minutes.
Add water (for 1 glass of rice I used 1 1/2 glass of water)
Cover lid and cook for 15 minutes. (You can also cook in pressure cooker. Up to 2 whistle in medium flame)
Serve hot with raita.
