Mixed vegetable kurma recipe with step by step photos
My Mil’s recipe for south Indian style mixed vegetable kurma
Vegetable kurma is a traditional side dish of Indian cuisine. We can see lot many varieties in vegetable kurma. My mom makes this vegetable kurma with ground coconut and some spices. After marriage, my Mil taught me to make another version of vegetable kurma which looks so simple and easy for me because my husband don’t like coconut in curries. So started making this vegetable kurma for chapathi,roti etc…
We can add lot many vegetables in kurma like carrot,beans,potato,beetroot,cauliflower etc… So mixed vegetable kurma is a healthy side dish we can opt for.Another easy to make side dish for chapathi or appam are Onion tomato masala,Dum aloo,Dal Curry, and Multi dal gravy

1 no of potato
12 no of beans
2 no of carrots
2 of tomato
1 no of onion
1 tbsp. of ginger garlic paste
3 no of sliced green chillies
A handful of coriander leaves
1/2 spn. of chilli powder
1/4 spn. of turmeric powder
1/8 spn. of coriander powder(optional)
1/8 spn. of garam masala
Salt as required
1 tbsp. of oil
Mixed Vegetable Kurma preparation steps
Step 01Wash and chop vegetables in to cube shape.Pressure cook with little salt.Keep aside.
Step 02Finely chop onion, green chillies and tomato.Crush ginger and garlic.
Step 03Heat oil in a pan.Add ginger garlic paste and sauté till raw smell goes off.
Step 04Add finely sliced onion and green chillies. Fry till onion become golden brown color.
Step 05Add sliced tomatoes and fry till tomatoes become mushy.
Step 06Add chilli powder,turmeric powder and coriander powder and fry for 1 minute.
Step 07Sprinkle garam masala and add chopped coriander leaves.
Step 08Add cooked vegetables and mix well.
Step 09Add water if you want more gravy.Check salt and close the lid.Slow cook for 2-3 minute in low flame.
Step 10Add some more coriander leaves.Serve hot with chapathi,roti etc…
