Baby corn manchurian is a delicious combination of crispy batter fried baby corn in a thick sweet and spicy corn flour gravy. This juicy manchurian gravy with capsicum and onion goes well with chapathi, roti, fried rice etc.
I always do experiments with baby corn as it is my kids favorite vegetable. They like baby corn baji, baby corn pizza kind of dishes. So this time I thought of introducing them some gravy version of baby corn and made this. They liked it with chapathi. We can also make dry baby corn manchurian recipe by skipping the last 2 steps of the recipe. i.e do not add corn flour mixture at last.

Ingredients
12 no of baby corn
For batter
1 spn. of cornflour
1/8 spn. of turmeric powder
1/6 spn. of chilli powder
Salt as required
For gravy
1 no of onion
1 no of capsicum
2-3 no of green chillies
2 tbsp. of spring onion/celery
1 tbsp. of ginger and garlic
1 tbsp. of tomato sauce
1 spn. of soy sauce
1 spn. of cornflour.
A pinch of salt
Salt as required
Baby Corn Manchurian Preparation Steps
Step 01
Wash and cut baby corn in to ½ inch piecesStep 02
Take cornflour,salt,ginger garlic paste,chilli powder and turmeric powder in a mixing bowl.Step 03
Add 2 tbsp. of water and make a thick batter.Step 04
Marinate baby corn pieces with this batter and keep aside for 10 minutes.Step 05
Heat oil in a kadai.Step 06
Fry baby corn pieces till golden brown color.Step 07
Chop onion and capsicum in to cube shape. Finely chop ginger and garlic.Step 08
Heat oil in a pan.(you can use the same oil we used for frying baby corn)Step 09
Add chopped ginger and garlic.Saute for a while.Step 10
Add chopped onion and green chillies.Saute till onion become translucent.Step 11
Add chopped capsicum and cook till capsicum is half cooked.Step 12
Add pepper powder and mix well.Step 13
Add fried baby corn and cook for 1- 2 minutes.Step 14
Add tomato sauce and soy sauce. Stir well and cook for 1 minuteStep 15
Mix 1 spn. of cornflour with 1/4 glass of water in a bowlStep 16
Pour the cornflour batter to baby corn mix and stir well.Check salt.Step 17
Add ¼ glass of water if you want gravy.Step 18
Cook till the gravy starts to thicken.Step 19

18.Add a pinch of sugar and mix well. Cook till the gravy starts to thicken.
19.Remove from flame and garnish with celery or spring onion.
Note :
1.Be careful while adding cornflour batter at last. Don’t add too much of water while making the batter. The curry will not be thick.
