Traditional Hyderabadi bagara baingan recipe
Bagara baingan is a popular vegetarian recipe from hyderabadi cuisine. This dish is very popular in Pakistan. It is also used as a side dish with the Hyderabadi biryani. Here I tried this dish in Bengali style. It is a sweet and sour dish which goes well with rice,roti etc… I have already tried bengali stylebrinjal pickle which is also a sweet and sour pickle. Ingredients
6 no of Baingan(Brinjal) with stem
2 spn. of Coriander powder
1/2 spn. of Turmeric powder
1 spn. of Red Chilli powder
3 tbsp. of Finely chopped onion
1 spn. of Ginger garlic paste
2 no of Green chillies
1 spn. of Grated coconut
2 tbsp. of Tamarind pulp
1 tbsp. of Jaggery
1/2 spn. of Mustard seeds
1/2 spn. of Cumin seeds
4 no of Red chilli
2 springs of curry leaves
Salt as required
Method
Step 01
Wash and wipe brinjal and slit into 4 pieces(Each piece has a part of stem).
Step 02
Heat oil in a pan and fry brinjal till brown color.Keep aside.
Step 03
Add curry leaves,onion,ginger garlic paste and green chilli in the same pan and fry till brown color.
Step 04
Add all the spices and salt.Stir well.
Step 05
Add tamarind pulp ,fried brinjal and little amount of water(3 TS).
Step 06
Cover lid of pan and cook over low flame.
Step 07
Now add jaggery and cook for another few minutes.
Step 08
Heat 1 TS of oil in an another pan and splutter mustard seeds,cumin seeds and curry leaves.
Step 09
Add this seasoning to the Baingan and mix well.
