Yummy and colorful South Indian dessert made with semolina and beetroot

Beetroot kesari is a colorful and tasty sweet made with rava (sooji/semolina) and beetroot. Kesari is a very famous sweet of South Indian cuisine. The word meaning of rava is semolina and kesari is saffron. But here we are not using saffron for getting the color for the kesari. As we all know beetroot is highly nutritious and it makes the dish tasty and healthy. Ghee is one of the important ingredients in beetroot kesari which makes the dish softer and melt in the mouth. you can also check out my Jackfruit Kesari and  Badam Kesari which have the goodness of jackfruit and badam.

How to make Beetroot Kesari

Ingredients

1/2 cup of grated Beetroot 1 cup of Semolina/Rava 3 tbsp. of Ghee 1/2 cup of Sugar 1 cup of Milk Nuts and Raisins to garnish

Method

Step 01

Heat ghee in a nonstick pan.

Step 02

Add cashews and kismis.fry till they turn golden brown and keep aside.

Step 03

Add rava to the same pan fry till the raw smell goes off.

Step 04

Add grated beetroot and stir well till the water in beetroot goes.

Step 05

Add sugar and milk/water continue stirring.

Step 06

When it becomes thick,add cashews,raisins and cardamom powder.Mix well.

Step 07

Allow the mix to cool and cut the shape you want.Garnish with cashew
