Healthy and delicious side dish perfect for chapathi
Beetroot kurma/korma is a traditional side dish of Indian cuisine. We can see lot many varieties in vegetable kurma like we make with grounded coconut,with onion tomato masala,with roasted coconut etc… Here I made this kurma with beetroot,potato,carrot and beans. Beetroot makes this curry colorful and more nutritious. I have already tried a mixed vegetable kurma with step by step photos. You can serve this vegetable kurma with whole wheat naan,Egg paratha,Kerala style appam or even with rice. We can add lot many vegetables in kurma like carrot,beans,potato,beetroot,cauliflower etc… So mixed vegetable kurma is a healthy side dish we can opt for. Another easy to make side dish for chapathi or appam are Onion tomato masala,Dum aloo,Dal Curry, and Multi dal gravy

How to make beetroot kurma(korma)
Ingredients
2 no of beetroot
2 no of potato
12 no of beans
2 no of carrots
2 of tomato
1 no of onion
1 tbsp. of ginger garlic paste
3 no of sliced green chillies
A handful of coriander leaves
1/2 spn. of chilli powder
1/4 spn. of turmeric powder
1/8 spn. of coriander powder(optional)
1/8 spn. of garam masala
Salt as required
1 tbsp. of oil
preparation steps
Step 01
Wash and chop vegetables in to cube shape.Pressure cook with little salt.Keep aside.Step 02
Finely chop onion, green chillies and tomato.Crush ginger and garlic.Step 03
Heat oil in a pan.Add ginger garlic paste and sauté till raw smell goes off.Step 04
Add finely sliced onion and green chillies. Fry till onion become golden brown color.Step 05
Add sliced tomatoes and fry till tomatoes become mushy.Step 06
Add chilli powder,turmeric powder and coriander powder and fry for 1 minute.Step 07
Sprinkle garam masala and add chopped coriander leaves.Step 08
Add cooked vegetables and mix well.Step 09
Add water if you want more gravy.Check salt and close the lid.Slow cook for 2-3 minute in low flame.Step 10
Add some more coriander leaves.Serve hot with chapathi,roti etc…
You can also try some more side dishes like Chicken Roast, Beef Curry, Mutton liver masala or Mutton potato masala,Meatball manchurian and vegetarian curries like Dum aloo,Dal Curry,Multi dal gravy
