Colorful tangy south Indian soup with beetroot


Rasam or Saaru is a famous South Indian soup, traditionally prepared using tamarind juice as a base, with the addition of tomato, and chili pepper, pepper, cumin etc…We can make rasam with dal,tomato,pineapple,beetroot,carrot etc…Here I made a colorful rasam with beetroot.Beetroot is rich in potassium, magnesium, iron, vitamins A, B6 and C, folic acid, carbohydrates, protein,antioxidants etc…It helps to control blood pressure and heart diseases.Try to include beetroot in your daily diet in the form of juice,stir fry,rasam,rice etc…

Ingredients

1 no of Beetroot
3 no of Tomato
3 cloves Garlic
1 small piece of Ginger
1 1/2 spn. of Pepper powder
A handful of Coriander leaves
1 spn. of Mustard seeds
1 spn. of Cumin seeds
Salt as required
Lemon sized Tamarind
1 cup of Water

Beetroot Rasam Preparation Method


Step 01


Soak tamarind to extract juice

Step 02


Grind tomatoes along with cumin seeds,ginger and garlic.

Step 03


Grate beetroot and keep aside.

Step 04


Heat oil in a pan.

Step 05


Splutter mustard seeds.Add cumin seeds,curry leaves,half of coriander leaves and pepper powder.Saute for a while

Step 06


Add tomato mix.Stir well.

Step 07


Add tamarind pulp,grated beetroot,1 cup of water and salt.Mix well and let it boil for 1-2 min.

Step 08


Add remaining coriander leaves,cover the pan and turn off the burner.Seve hot with rice
