Easy and healthy lunchbox idea for your kids
Beetroot rice is a yummy colorful and healthy dish especially for your kids. Beetroot contains potassium, magnesium and iron as well as vitamins A, B6 ,C, and folic acid.Beetroot reduce blood pressure as well as its associated risks such as heart attacks and strokes. Of course your kid will not say NO to this pink color rice and crunchy corn.Also egg makes the dish protein rich.Please try out this recipe and let me know how it went out for you.
1/2 cup of Grated beetroot
1 cup of Brown rice/white rice
1 no of Boiled egg
2 Tbsp of Boiled corn kernels
1/4 spoon of Cumin seeds
1 pinch of Pepper powder(optional)
1 Spoon of Butter
Salt as required
Preparation Method of Beetroot Rice
Cook rice with grated beetroot,salt,cumin seeds,1 pinch of pepper powder and 1 S of butter.(If you are using brown rice,u need to pressure cook for 5 min in medium flame(2 glass of water for 1 glass of brown rice))
Garnish with boiled rice and corn kernels.
Serve with coconut chutney.
