Spicy Bengali brinjal pickle.
Brinjal pickle in Bengali style. It is a sweet and spicy pickle which goes well with indian dishes like rice,roti etc… Usually we make curry,rice and stir fry with brinjal. Pickle with brinjal was new to me. I got this recipe from a TV show. Tried and it was really delicious. I have already tried Baghara baingan which is also a sweet and sour Bengali dish. Hope you all will like this recipes

Ingredients
3 no of large Brinjal
10 no of Garlic cloves
1 medium sized ginger
1 spn. of Mustard seeds
1 spn. of Cumin seeds
2 tbsp. of Chilli powder
1/4 spn. of Turmeric powder
1/6 spn. of Fenugreek powder
1 spn. o fCrushed Pepper
1/4 spn. of Asofetida
3 tbsp. of Vinegar
1 spn. of Sugar
3 springs of Curry leaves
1 tbsp. of Oil
salt as required
Method
Step 01
Wash and cut brinjal into pieces.
Step 02
Cut ginger,green chillies and garlic finely.
Step 03
Soak brinjal in salt water for 1 hour.
Step 04
Take brinjal pieces and dry it using a towel.
Step 05
Heat oil in a pan.
Step 06
Add brinjal pieces and fry well for 2-3 minute. Take out from the oil and keep aside.
Step 07
Splutter mustard seeds and cumin seeds in the same oil. Add chopped garlic and ginger. Saute well for 1 minute.
Step 08
Add curry leaves and crushed pepper. Saute for a while.
Step 09
Add chilli powder,turmeric powder,a pinch of fenugreek powder. fry for 1/2 minute
Step 10
Add brinjal pieces and mix well. Fry for 1 minute.
Step 11
Add sugar and vinegar. Mix well. Cook for 2-3 minute
Step 12
Remove from flame. Allow to cool. Store in glass bottle
Step 13
goes well with curd rice,kanji etc…
Note :You can add more sugar if you want a sweetness in your pickle.Or you can avoid sugar if you don’t like sweetness.
Vinegar amount also you can increase or decrease.If you are using less vinegar,store pickle in refrigerator.
