Brazilian Carrot Cake with chocolate icing
Easy to make Brazilian Carrot Cake in Pressure Cooker
Carrot cake is very easy to make and requires no special ingredients. I have already posted simple
Carrot Cake in pressure cooker. In this recipe I used same method to prepare the carrot cake additional part is the chocolate icing. Preparing chocolate icing is also very simple. Hope you all will like this recipe.

Ingredients
2 cup of All purpose flour(maida)
2 no of medium carrots
2 no of eggs
1 cup of sugar
¾ cup of oil
1 spn. of baking powder
Chocolate icing
2 spn. of coco powder
2 spn. of powdered sugar
1/4 cup of milk
3 spn. of butter
Method
Step 01
Cleans and wash carrots. Chop in to small pieces
Step 02
Grind carrots along with oil,sugar and eggs to smooth paste.
Step 03
Take all purpose flour and baking powder in a bowl. Mix well with hands and Sieve the flour mix twice.
Step 05
Add the grounded carrot mixture and stir well.
Step 06
Grind the batter for 2-3 minutes.
Step 07
Grease cake tray with butter or ghee and pour the batter. Leave 1 inch free space.
Step 08
Take pressure cooker and place a steel bowl inside.
Step 09
Place the cake try carefully on the top of that bowl
Step 10
Cook for 1 minute in high flame (Do not put weight while baking cake). Reduce the flame and bake for 30-40 minutes. Insert a toothpick at the center of cake and if it is comes out clean, cake is ready otherwise again cook for 5 more minutes.
Chocolate icing
Step 1
Take coco powder,powdered sugar,milk and butter in a non stick pan.
Step 2
Switch on the flame and cook for 3-4 minutes. Stir continuously.
Step 3
When the batter becomes a thick batter consistency,remove from fire and pour over cake
Step 4
Garnish with gems or any other toppings of you wish.
