Brazilian Carrot Cake with chocolate icing
Easy to make Brazilian Carrot Cake in Pressure Cooker
Carrot cake is very easy to make and requires no special ingredients. I have already posted simple Carrot Cake
in pressure cooker. In this recipe I used same method to prepare the carrot cake additional part is the chocolate icing. Preparing chocolate icing is also very simple. Hope you all will like this recipe.
2 cup of All purpose flour(maida)
2 no of medium carrots
2 no of eggs
1 cup of sugar
¾ cup of oil
1 spn. of baking powder
2 spn. of coco powder
2 spn. of powdered sugar
1/4 cup of milk
3 spn. of butter
Cleans and wash carrots. Chop in to small pieces
Grind carrots along with oil,sugar and eggs to smooth paste.
Take all purpose flour and baking powder in a bowl. Mix well with hands and Sieve the flour mix twice.
Add the grounded carrot mixture and stir well.
Grind the batter for 2-3 minutes.
Grease cake tray with butter or ghee and pour the batter. Leave 1 inch free space.
Take pressure cooker and place a steel bowl inside.
Place the cake try carefully on the top of that bowl
Cook for 1 minute in high flame (Do not put weight while baking cake). Reduce the flame and bake for 30-40 minutes. Insert a toothpick at the center of cake and if it is comes out clean, cake is ready otherwise again cook for 5 more minutes.
Take coco powder,powdered sugar,milk and butter in a non stick pan.
Switch on the flame and cook for 3-4 minutes. Stir continuously.
When the batter becomes a thick batter consistency,remove from fire and pour over cake
Garnish with gems or any other toppings of you wish.
