Carrot Halwa / Gajar Ka Halwa
Carrot halwa or Gajar ka halwa is a very famous sweet dish of Indian cuisine which originated from Punjab. Making of this dessert is so simple and we can store this dish in refrigerator for many days. Carrot halwa is an all time favorite of my family and my kids ask me to prepare at least 2-3 times in a month. I feel it is a perfect way to make our little ones eat carrots.
We can make carrot halwa in many ways and here I am sharing the traditional way. I have used carrots, milk, ghee and milk. We can also make this dessert with condensed milk or khoya to make it more tasty. You can also check for my easy to make sweet dishes like Badam Kesari, Beetroot kesari, wheat laddu etc. Hope you all will like this recipe. Ingredients
3 no of Carrot
1/2 ltr of Milk
100 gm of Sugar
1/4 spn. of Cardamom Powder
20 no of Nuts and raisins
Carrot Halwa Preparation Method
Step 01
Wash and grate the carrots.
Step 02
Heat ghee(1 TS) in a thick bottom vessel. Add grated carrots. Sauté for 1-2 minute.
Step 03
Add milk(for 2 cup of grated carrot i took 1 cup of milk). Bring it to a boil and put the fire on medium. Stir well.
Step 04
Add sugar after 2 minute.(For 2 cup of carrot,1/2 cup of sugar is enough.).
Step 05
Mix well and cook till the sugar has dissolved and all the milk has been absorbed.
Step 06
Add 1 S ghee and simmer for 2-3 minutes(optional)
Step 07
Add cardamom powder and mix well.
Step 08
Add roasted nuts and raisins. Mix well and turn off burner. Garnish with almonds and cashews. Serve hot or chilled.
Note
You can add 2 TS of condensed milk along with milk for better taste. Then you should reduce the quantity of sugar.
