Healthy and tasty stir fry with Carrot.
Carrot Thoran is a healthy stir fry recipe with carrot and grated coconut. It is a common stir fry recipe of south india. Carrot thoran is very easy to make and a healthy side dish that goes well with rice. As we all know carrot is a very healthy vegetable and is very good for eyes and skin. How to make Carrot Thoran
Ingredients
3 no of carrots
1 cup of Grated Coconut
10 no of Shallots
1/2 spn. of cumin seeds(optional)
4 no of Green chilli
Salt to taste
1/2 spn. of Mustard seeds
3 springs of Curry leaves
1 spn. of Oil
Method
Step 01
Finely chop the carrots. Crush grated coconut with shallots,green chillies and cumin seeds.
Step 02
Heat oil in a pan.
Step 03
Splutter mustard seeds.
Step 04
Add curry leaves and crushed coconut mix and salt. Saute for 2 minutes in medium flame.
Step 05
Add chopped carrots and mix well. Check salt.
Step 06
Sprinkle 1/4 cup water and cover lid.Cook for 10 min in low flame. Stir often
