Chakka Pradhaman | Jackfruit Preserve Kheer
Delicious kerala special Chakka pradhaman made with jackfruit preserve
Chakka pradhaman is my all time favorite dish. I love to make different varities of dishes with chakka varatti like kozhukkatta,ada,kheer etc… My mom gave one bottle full of chakka varatti when I came to bangalore after vacation. Usually we prepare this chakka pradhaman with chakka varatti( jackfruit preserve). You can also prepare chakka pradhaman with ripe jackfruit. But kheer made with chakka varatti will taste good than the ripe one. I used jaggery and coconut milk for preparing the kheer.Hope you will like this delicious chakka pradhaman

Ingredients
200 g of jackfruit preserve(chakka varatti)
1 no of coconut
100g of jaggery ( Chakka varatti is prepared by adding jaggery. So we need to take less amount jaggery for making kheer)
1 spn. of (cardamom,cumin,dried ginger(chukku) powder
1 spn. of ghee
1/4 cup of thinly sliced coconut(thenga kothu)
1 tbsp. of nuts
1 tbsp. of raisins
Chakka Pradhaman Preparation Method
Step 01
Make thick jaggery solution (cook jaggery with 3 tbsp. glass of water). Keep aside.
Step 02
Extract coconut milk – onnam paal(first just crush grated coconut with 2 tbsp. of water and take milk by squeezing coconut mix with hands) randaam paal (Add 1/4 glass of water to the crushed coconut and grind for 3-4 seconds.Extract the milk). Moonnam paal (Add 1/2 glass of water to the crushed coconut and grind for 5 seconds.Extract the milk). Keep aside
Step 03
Cook jaggery solution in thick bottom vessel.
Step 04
Add third coconut milk(moonnam pal) and mix well. Allow to boil.
Step 05
When it starts to boil, add jackfruit preserve(chakka varatti).Mix well and cook for 5 minutes. Stir continuously.
Step 06
Add second coconut milk (randaam paal). Stir well.
Step 07
When it starts to thicken, add cardamom,dried ginger and cumin powder. Mix well and cook in low flame.
Step 08
Add first coconut milk(onnam aal) and mix well. Cook for 1 minutes.
Step 09
When it starts to boil, add roasted coconut slices,nuts and raisins.
Step 10
Mix well and serve hot.

3.When it starts to boil, add jackfruit preserve(chakka varatti).Mix well and cook for 5 minutes. Stir continuously.
4.Add randaam paal(second coconut milk). Stir well.
5.When it starts to thicken, add cardamom,dried ginger and cumin powder. Mix well and cook in low flame.
6.Add first coconut milk(onnam aal) and mix well. Cook for 1 minute. Turn off the flame.
7.Heat ghee in another pan.
8.Roast coconut slices till golden color.
9.Roast nuts and raisins same way and directly add this to chakka pradhaman along with ghee.
