Healthy chicken vegetable pulao recipe.

Chicken pulao with the goodness of vegetables and spinach. Compared to other rice dishes, pulao is more healthy because we can add vegetables,spinach,mutton etc…. I have also added soya chunks which makes this dish more protein rich. You can also add dry fruits like raisins,nuts,badam etc… In this chicken pulao, I cooked chicken with pepper and salt and then cooked rice along with vegetables and masala. I would like to share some of my healthy rice like

How to make chicken pulao



1 cup of rice(sona masoori,biryani rice,jeera rice etc…)
1/4 kg of chicken
1 no of onion
1 spn. of ginger garlic green chilli paste
1/2 cup of corn
1/2 cup of chopped carrots
1/2 cup of peas
1 cup of soya chunks
1 tbsp of chopped onion
2 no of cinnamon sticks
1 no of cardamom
2 no of cloves
1/2 spn. of pepper
1 tbsp. of lemon juice
1 spn. of butter/ghee
salt as required


Step 01

Wash and soak rice in water for 15 minutes. Drain it and keep aside.

Step 02

cook chicken pieces with 1/4 spn. pepper,salt and 1 glass of water. Once it is cooked, remove bones from chicken and shred the chicken. Keep the chicken stock to cook rice.

Step 03

Soak soya chunks in warm water for 5 minutes. Squeeze out the water and keep aside. (you can check the link for how to cook soya chunks)

Step 04

Heat butter/ghee in a pressure cooker or pan.

Step 05

Add cinnamon sticks,cardamom and cloves. Add ginger garlic paste and saute till raw smell goes off.

Step 06

Add chopped onion,chopped vegetables,chopped spinach,soya chunks and mix well.

Step 07

Add pepper powder and fry for a while.

Step 08

Add shredded chicken and saute for 1-2 minutes.

Step 08

Add soaked rice and fry for 1 minute.

Step 09

Add chicken stock and remaining quantity of water(for one cup of rice add 1 1/2 cup of water). Add salt and 1 tbsp. of lemon juice.

Step 10

Cover the lid and cook for 1 whistle in medium flame. Open the lid only after 5-7 minutes. Add tomaotes and chopped coriander leaves, Again cover the lid for 5 minutes. Serve hot with vegetable raita


1.You can add any vegetables of your wish like cauliflower,potato,beans etc…
2.Adding fried soya chunks will make the pualo more tasty.
3.You can also make this pulao without crushed ginger and garlic.
