Chicken Salad | Chicken salad recipe with fresh vegetables
Chicken salad is a delicious, protein rich and filling salad with chicken and vegetables. Salads are healthy and refreshing meals on their own and sometimes accompanied with other dishes. Compared to any other dishes, salads are very healthy and comfort meal. We can prepare salads in many varieties. Salads can made with fruits vegetables, cooked vegetables, meat, cereals etc…
Here, I would like to share the recipe of easy chicken salad which is made with steamed chicken and fresh vegetables. I have used olive oil, lemon juice and salt for dressing but you can also use any dressings of your choice. Chicken Salad is a protein rich and refreshing salad contain many vegetables like cucumber, carrot, capsicum, onion etc…. Hope you all will like this easy to make salad. How to make chicken salad
1/4 kg of chicken breast
1 medium sized Onion
2 medium sized carrots
10 cherry tomatoes
1 medium sized Cucumber
1 medium sized capsicum
1 cup of lettuce.
1 tbsp. of olive oil
1/2 spn. of crushed pepper
1 spn. of lemon juice
salt as needed
1/4 spn. of pepper powder
1/2 spn. of herb seasoning
1 tbsp. of olive oil
1/4 spn, of crushed red chilli
Salt as needed
Chicken Salad Preparation Method
Clean and marinate chicken breast with the ingredients given under “marinade” section. Gently Pierce the chicken using a fork(or cut in to small pieces). Keep aside for 10-15 minutes.
Slow cook chicken on low flame for 6-10 minutes with very little quantity of water. Keep aside and allow to cool.
Chop all the vegetables in cube shape and add this to a large mixing bowl.
Add lemon juice,pepper powder,salt and olive oil.
Shred chicken in to thin pieces and add to bowl. Mix well and keep aside for 15 minutes.
