Dum Aloo Recipe | North Indian dum aloo with baby potatoes
Dum Aloo is a famous north indian side dish prepared with Potatoes.Actually dum aloo is came form kashmiri cuisine.Here I would like to share the Punjabi style of dum aloo preparation with you.We are using baby potatoes for making this curry.You can use big one also.You need to cut the big potatoes in to cube shape and fry. It will take around half hour to make this curry.But no worry the taste is that much good 🙂 . Dum aloo goes well with chapathi,roti,rice etc… I am sure you all will like this north Indian side dish
1/2 kg of baby potatoes
2 no of medium sized onion
3 no of tomatoes
1 tbsp. of ginger garlic paste
2 no of cinnamon
2 no of cloves
2 no of bay leaves
2 no of cardamom
1/4 spn. of turmeric powder
1/2 spn. of chilli powder(kashmiri chilli preferred)
1/4 spn. of coriander powder
1/4 spn. of garam masala
10 no of nuts soaked in water for 15-20 minutes
4 tbsp. of oil
A handful of coriander leaves
1/4 cup of yogurt
2 cup of water
Salt as required
Dum Aloo Recipe : Preparation Steps
Step 01clean baby potatoes and pressure cook till one whistle in medium flame(do not overcook)
Step 02Meantime grind onion to smooth paste.Same way make tomato puree and nuts paste (separately). Keep aside.
Step 03Peel off and shallow fry the baby potatoes till golden brown color.Sprinkle some salt while you fry the potatoes.
Step 04Heat oil in a pan.
Step 05Add cinnamon stick,cardamom,cloves and bay leaves.Fry for 1/2 minute.
Step 06Add ginger garlic paste.Saute till raw smell goes off.
Step 07Add onion paste and saute till onion get brown color(It may take around 10 minutes.Stir often)
Step 08When oil starts to came out from onion,add tomato puree.Mix well and saute for 5 minutes.
Step 09Add chilli powder,turmeric powder and coriander powder.Mix well and fry for another 5-7 minutes in low flame till oil separates from the mix.
Step 10Add nuts paste.Mix well and fry for 1-2 minutes.
Step 11Add yogurt mix,salt and fry for another 3-4 minutes.
Step 12Add 1 cup of water and bring to boil(If you want thick gravy,adjust the quantity of water)
Step 13Now add fried baby potatoes and mix well.Add coriander leaves and garam masala.Cover lid and cook for 3-4 minutes.
Step 14Serve hot.
