Tasty and spicy side dish for chappathi,roti,appam etc…
Egg roast is the famous traditional side dish of Kerala. We used to serve egg roast with appam,wheat paratha,vellyappam, idiyappam or even with rice. But I would like to serve egg roast with Pathiri. This combination brings back my childhood memories. My mom used to serve pathiri and egg roast with coconut milk which was heavenly. There are a lot many ways to prepare this dish such as egg rost with coconut milk, roasted coconut with grounded onion paste etc… Here I made this egg roast in a traditional way, with onion and tomato masala. How to make egg roast?
4 no of Eggs
1 no of large Onion
2 no of large Tomato
4 no of Green chillies
1 tbsp. of Ginger garlic paste
1/4 spn. of Turmeric powder
1/2 spn. of Chilli powder
1/2 spn. of Garam masala
1/4 spn. of Coriander powder
1 cup of Thick coconut milk
A handfull of Curry leaves
Salt to taste
1 tbsp. of Oil
Egg Roast Preparation Method
Boil the eggs and remove the shell.
Heat oil in a pan.
Add ginger garlic paste.Saute till row smell goes off.
Add chopped onion,curry leaves,green chillies. Fry till golden brown color.
Add chopped tomatoes.
When tomatoes became mushy,add all the spices(1/4 S of garam masala) and saute for 2 min.
Cut egg to 4 peaces and add to the mix.Add coconut milk and salt.Mix carefully.
Sprinkle remaining 1/4 S garam masala and cover the pan. Cook for 5 min in low flame.
