Garlic Pickle | Poondu oorugai | Veluthulli Achar
Healthy and easy to make garlic pickle
Garlic is a wonderful seasoning to add a nice aroma in curries especially in Indian cuisine. We used to add garlic in almost all the curries. It is a very healthy and aromatic root vegetable. Garlic pickle is my family’s favorite. We can make garlic pickle in many varieties like sweet and sour pickles, sun-dried garlic pickles, dates and garlic pickles etc… Here I would like to share the simple garlic pickle recipe. I steamed the garlic before making pickles. You can add as such also. If you are not steaming garlic, the pickle will be crunchy and we need to keep the pickle for some days before use.

How to make garlic pickle?
Ingredients
1/2 kg of garlic
2 tbsp. of finely chopped ginger
2 tbsp. of finely chopped green chilies (optional)
3 tbsp of chilly powder
1/2 spn. of Fenugreek powder
3 tbsp. of sesame oil
1 spn. of mustard
1/2 spn. of asafoetida
Salt as required
1/4 cup of Vinegar
Garlic Pickle Preparation Method
Step 01
Peel off garlic and wash thoroughly.
Step 02
Steam the garlic cloves using a steamer (you can use Idli steamer) for 4-5 minutes. Do not overcook the garlic cloves. Allow retaining the shape, not a mushy consistency.
Step 03
Heat oil in a pan.
Step 04
Splutter mustard seeds. Add chopped ginger and green chilies. Fry for 1-2 minutes
Step 05
Put the flame to low and add chilli powder, asafoetida, and fenugreek powder. Saute for 1-2 minutes.
Step 06
Add steamed garlic, salt, and vinegar. Mix well and keep in flame for 5 minutes.
Step 07
Remove from fire and allow it to cool. Your garlic pickle is now ready to use. Store in glass bottles.
Note:
1.You can use any oil of your choice.But sesame oil is good for making pickles
