Ghee Rice
Ghee Rice is a simple and aromatic traditional dish of India.
Ghee rice is very flavorful and easy to make main course. As it name implies, ghee rice is prepare in ghee. But if you are health conscious, you can use any kind of oil like olive oil,sunflower oil for cooking rice (Just sprinkle one spoon of ghee when the rice is cooked.Cover the pan for 5-7 minutes). In Kerala ghee is known as neychor( ney mean ghee and chor means cooked rice 🙂 )Ghee needs very few ingredients and no need of any masala.Just saute the dry spices like cinnamon,cardamom,bay leaves, and finely sliced onion. Add water and let it boil. Then add salt and rice. Cook in low or medium flame.Ghee rice is ready. Ghee rice goes well with Nadan Beef Curry,Mutton roast,Chicken roast etc… You can also try the vegetarian side Dal curry for ghee rice.

How to make Ghee Rice
Ingredients
- 1/2 kg of Jeera rice/Basmati rice
- 2 no of Onion
- 1 cup of Carrot
- 3 no of Cinnamon
- 3 no of cardamom
- 5 no of Cloves
- 50g of Raisins and nuts
- 1 tbsp. of Ghee/Oil
- Water as required
- Salt as per taste
Method
Step 01
Finely slice onion.Step 02
Heat ghee in a heavy bottom vessel.Step 03
Fry half of onion till golden color.Remove from vessel and keep aside.Step 04
Add cloves,cardamom and cinnamon.Saute for 1 minute.Step 05
Add onion and carrot.Saute for 3 minute.Step 06
Add water(for 1 cup of rice,I used 1 1/2 cup of water).Allow to boil.Step 07
When the water starts to boil,add rice.Cover lid of pan and cook in flow flame for 5-6 minute.Step 08
Stir rice after 5 minute.If you feel the rice is not cooked enough,add 1/4 cup of hot water and again cook for 2-3 minute in low flame.Step 09
Garnish with fried onion,raisins and nutsNote : I am getting queries regarding how many people can have ghee rice with one kg basmati – Almost we can serve rice for 5 persons with 1 kg of rice.
