Instant vegetable pulao – An easy lunch box idea for your kids with step by step pictures

Healthy power packed tasty pulao for your little ones.

Instant vegetable pulao perfect with few ingredients. This is a quick and easy one pot meal for school going kids. Compared to other rice dishes, pulao is more healthy because we can make our kids eat many vegetables.

I prepare this pulao once in a week for my kids. They like this vibrant color of this dish. I have added vegetables and fruits in this pulao as my kids like little sweetness in dishes. You can also add dry fruits like raisins, nuts, and almonds to make the pulao crunchy and more healthy. What makes this pulao so simple is we are using cooked rice and just mixing with veggies.

Normally while making pulao, we cook rice along with vegetables and masala. But here I have cooked the rice separately and mixed with the vegetable. You can also prepare this pulao with left over rice. I am sure your kids will love this instant colorful pulao. Hope you all will like this instant vegetable pulao recipe. 1 cup of rice(sona masoori,biryani rice,jeera rice etc…)
1/2 cup of corn
1/2 cup of chopped carrots
1/2 cup of peas
1 tbsp of chopped onion
2 no of cinnamon sticks
1 no of cardamom
2 no of cloves
1 spn. of butter/ghee
salt as required


1.Cook chopped carrots,peas and corn together with salt.Cook rice,drain it and keep aside.
Heat butter/ghee in a pan.
2.Add chopped onion,cinnamon sticks,cardamom and cloves.Saute till onion get translucent.
3.Add cooked vegetables and saute for 1-2 minutes.Add cooked rice.Mix well.
4.Garnish with pomegranate and chopped apple.Add 1-2 pinch of pepper powder if you want.Adjust salt and serve hot with onion raita.


1.You can add any vegetables of your wish like cauliflower,potato,beans etc…
2.Adding fried soya chunks will make the pualo more healthy.
3.You can also add crushed ginger and garlic along with chopped onion.
