Spicy and delicious Kerala style sprouted black chana stir fry
Kala chana sundal or kadal upperi is a common traditional side dish we used to serve with rice in Kerala. I made this chana stir fry some more healthy. For that I used sprouted kala chana/black bengal gram.(Check this link to know How to make home made sprouter at home. There is no special ingredients needed to make this dish. We can use this stir fry as a side dish or a healthy snack for your kids. I have already tried Sprouted green gram stir fry. You can also check for my 20 + Stir fry (Upperi) recipes. Ingredients
250g of Black chana/kala chana
4-5 no of shallots or 1 no of onion
6-7 no of garlic cloves
1 cup of grated coconut
1/2 spn. of chilli powder
1/6 spn. of turmeric powder
A handful of curry leaves
1/4 spn. of mustard seeds
1 spn. of oil
Salt as required
Preparation Steps
Step 01
Wash black chana and soak in water for 5-6 hours. Drain it and store in a cloth or in a sprouter for 8 hours. (you can also use soaked chana for making this sitr fry)Step 02
Wash the chana again and pressure cook with little salt for 3 minutes in medium flame.Step 03
Crush shallots and garlic.Step 04
Heat oil in a pan.Step 05
Splutter mustard seeds.Step 06
Add crushed shallots and garlic mix, curry leaves.Fry for 1-2 minutes till golden brown color. Add grated coconut and fry for one minute.Step 07
Add chilli powder,turmeric powder and saute for 1 minute.Step 08
Add cooked chana and mix well. Fry for 1 minute.Step 09
Serve hot.
