Kannimanga Achar /Tender mango pickle

Spicy pickle made with tender mangoes

Kannimanga achar / tender mango pickle is a traditional pickle of Kerala. We used to make pickle with many vegetables like mango, gooseberry, papaya, lemon etc… Pickle with tender mango is a little complex and it will take more time compared to other pickles. This recipe is the traditional way of making kadumanga/kannimanga achar. I have already posted Kerala style raw mango pickle and you can also check for my 10+ Mango recipes   here.

How to make Kadumanga achar /kannimanga achar


  • 1/2 kg of Tender mangoes
  • 150 gm of Salt
  • 1 tbsp. of Mustard seeds
  • 200g of Red chillies
  • 1 spn. of Asafoetida
  • 4 tbsp. of Oil


Step 01

Wash Mangoes well, shook off excess water, placed them on a clean white dry cloth, wrapped up and patted dry.

Step 02

Stack mangoes in a glass bottle.Add salt and shake well.

Step 03

keep this mango for 7 days. Shake often.

Step 04

Remove seeds of red chilli and grind well to fone powder. Keep aside

Step 05

Powder mustard seeds and keep aside.

Step 06

Place the mango in a pot. Add chilli powder, mustard powder and Asafoetida. No need to add salt now.

Step 07

Add mangoes back to a glass bottle. Serve after one week. Goes well with kanji and rice.
