Kerala style ethakka kaya nurukku upperi recipe
Crispy kaya nurukku special snack of onam
Kaya nurukku or quartered banana chips is the traditional snack of kerala. We used to prepare kaya nurukku before 2-3 days of onam. Nostalgic memories of our neighbor aunty and family, my little effort of helping them for preparing kaya nurukku and sharkkara upperi. Old good days.
kaya nurukku recipe is so simple and easy. We can prepare this within 30 minutes at home itself. It is always better to fry the chips in coconut oil to get a nice aroma. Kaya nurukku goes well with black tea. Hope you will like the recipe

Ingredients
3 no of well matured plantain(ethakka)
1 spn. of turmeric powder
1/2 glass of water
Salt as required
Oil for fry
Kaya nurukku upperi preparation method
Step 01
Peel off the skin of plantain. Take a large vessel add 1/2 son. of turmeric powder and mix well. Soak plantain in this mix for 15-20 minutes to avoid browning.
Step 02
Finely cut the plantain into quarter pieces(4 pieces)
Step 03
Take a bowl and add 1/4 spn. of turmeric powder,salt and 1/2 glass of water. Mix well.
Step 04
Heat oil in a pan and allow to reach smoking hot.
Step 05
Reduce the flame to low and add banana pieces.stir frequently.
Step 06
When the chips starts to float in the oil, add 1-2 spn. of turmeric water and fry till the chips become crisp(take 2 more minutes.Be careful while adding the turmeric water in to oil)
Step 07
Drain the chips from oil . Once it reaches to room temperature , store in airtight containers
