Spicy and delicious Kerala style Korrka Upperi
Koorka upperi is a famous traditonal stir fry recipe of Kerala. There is no need to explain the taste of koorka to a Malayali. Kooka is also known as Chinese potato / seppa kezhangu is a seasonal root vegetable. I am a great fan of koorka because of its distinct aromatic flavor. You can also check for my the traditional stir fry recipes like Chembu(Yam) Puzhukku,Idichakka Thoran, Cheera upperi , Kachil Mezhukkupuratti | Greater Yam Stir Fry etc. All these recipes give nostalgic taste which cannot be replaced with any modern dishes.
In Kerala, we make both curry and stir fry with koorka which we normally serve with rice. Koorka curry is made with grounded coconut but I like stir fry than curry. There are no special ingredients needed to make this dish. Here I used shallots and garlic for making this stir fry. Only the complicated part of making koorka dishes are cleaning the koorkka, but when you taste this dish surely you will forget the effort you have taken to clean it. Ingredients
250g of Koorka
4-5 no of shallots or 1 no of onion
6-7 no of garlic cloves
1/2 spn. of chilli powder
A handful of curry leaves
1/4 spn. of mustard seeds
1 spn. of oil
Salt as required
Preparation Steps
Step 01
Wash,clean and cut koorka into small cubes. Cook it along with 1/2 glass of water and salt.(5 minutes in a pressure cooker)Step 02
Crush shallots and garlic using a grinder.Step 03
Heat oil in a panStep 04
Splutter mustard seeds.Step 05
Add crushed shallots and garlic mix, curry leaves.Fry for 1-2 minutes till golden brown color.Step 06
Add chilli powder and saute for 1 minute.Step 07
Add cooked koorka and mix well. Fry for 1 minute.Step 08
Serve hot.
