Spicy South Indian recipe
Kothu parotta is a famous street food of South India, especially Tamandu and Kerala. This flavorful dish is made with parotta, egg, onion, green chilies and curry masala. Parotta used for making this dish is a famous main course is soft and layered bread, made with all purpose flour. Unlike North Indian Paratha, this parotta is prepared in a different way.
The word meaning of ‘kothu’ is chopped or minced. It is prepared by mincing or chopping the parotta with egg, vegetable and sauté in vegetables and curry masala. There is no need to make separate gravy for making this kothu parotta, you can use chicken or beef gravy. Here I have used chicken gravy for making this dish. Black tea is the perfect combination for kothu parotta.

How to make Kothu Parotta
Ingredients
4 no of plain parottas
3 no of eggs(lightly beaten with little salt and pepper)
1 no of chopped onion
1 no of finely chopped tomatoes
4 no of sliced green chillies
1 cup of chicken gravy
1/2 cup of Shredded Chicken(optional)
1 spn. of ginger garlic paste
4 tbsp. of finely chopped coriander leaves
2 springs of curry leaves
1/2 spn. of chilli powder
1/4 spn. of turmeric powder
1/6 spn. of pepper powder
1/4 spn. of garam masala
Few drops of lemon juice
Salt as required
1 tbsp. of oil
Method
Step 01
Heat oil in a pan
Step 02
Add ginger garlic paste.Fry till the raw smell goes off.
Step 03
Add finely chopped onion and green chillies. saute till onion get translucent.
Step 04
Add finely chopped tomatoes.Fry till tomatoes become mushy.
Step 05
Add all the spices.Fry for 1 minute in low flame.
Step 06
Add beaten egg mixture and scramble it till almost cooked.
Step 07
Add chopped coriander leaves.Saute for a while.
Step 08
Dump the parotta shreds and chicken shreds.Mix well for 1-2 minute.Add chicken gravy(You can also use water instead of chicken gravy) and again mix well.
Step 09
Add salt and finish it off with few drops of lime juice
Step 10
Goes well with black tea.No need of any side dish…Enjoy
