Mint Rice | Pudina Rice
Flavorful rice with mint and lemon
Pudhina rice or mint rice is a simple and easy-to-make rice dish. The perfect combination for this mint rice is plain yogurt. You can also have with Vegetable raita or Mint chutney. Mint is a good source of Protein, Thiamin, Niacin, Vitamin B6, Phosphorus and Zinc, Dietary Fiber, Vitamin A, Vitamin C, Iron, Magnesium, and Potassium. Mint is also good for cold and cough. We can also make Mint chutney,Mint vada etc… with this wonderful leaf. The best combination for mint rice is mixed vegetable raita. Hope you all will like this recipe.

Ingredients
2 cup of of pulao rice/biryani rice/sona masoori
2 cup of chopped Mint leaves
1/2 of one lemon
1 no large onion
6-7 no of shallots
1 small piece of ginger
3 no of garlic cloves
3 no of green chillies
Whole spices
1 spn. of fennel seeds
3 piece of bay leaves
2 no of cinnamon sticks
Method
Step 01
Wash and soak rice in water for 15 minutes.
Step 02
Gently crush mint leaves along with shallots,green chillies,garlic and ginger. Keep aside.
Step 03
Heat oil in a pan. Add all the ingredients mentioned under whole spices. Fry till they become fragrant.
Step 04
Add sliced onion and fry till it become golden brown color.
Step 05
Add crushed mix and fry for 2-3 minutes.
Step 06
Add soaked rice and mix well. Add lemon juice and salt. Mix well and fry for 2-3 minutes.
Step 07
Add water (for 1 glass of rice I used 1 1/2 glass of water)
Step 08
Cover lid and cook for 15 minutes. (You can also cook in pressure cooker. Up to 2 whistle in medium flame)
Step 09
Serve hot with raita.
