Modak in Milk
Yummy combination of rice dumplings and coconut milk
Its a very simple and delicious dish. You can add sliced almond also while boiling the dumplings.
1 cup of Rice flour(unbolied rice)
3 cup of Coconut Milk
2 tbsp. of Cow Milk(optional)
1/2 cup of Sugar
1/4 spn. of Cardamom powder
1 pinch of Saffron
1 pinch of Salt
Take a heavy bottom vessel.Add water and boil(for 1 cup of of rice flour I took 1 1/2 cup of water).
Allow the water to boil. When the water starts boiling add the rice flour(you can use puttu podi or pathiri podi also) to this, stirring continuously without allowing any lumps to form.
When the mixture has formed into smooth thick dough, remove from fire. The dough must be thick enough like chappathi dough.
Smoothen the prepared rice flour batter with your hands.
Make small balls (like size of a gooseberry).
Take coconut milk first one -1 cup(onnal pal) and second one -2 cup(randam pal) and keep aside.
Boil second milk in a vessel.
Add rice dumplings, close lid of the pan and cook well for 5 min in medium flame.
After 5 minutes, add 2 pinch of salt, sugar, cow milk and cardamom powder.Cook well for 2-3 min.
Add remaining first milk. When it gets boiled, remove from flame.
Garnish with saffron.
