Potato and Carrot Curry
Easy to make healthy side dish
This Potato and carrot curry is a less non spicy easy to make curry. There is no onion and garlic I have added in this curry. This is a perfect side dish for chapathi. I likes non spicy curries like Green gram kuruma, Methi matar malai and Multi Dal gravy. But my husband is a big fan of spicy curries. So when I made this curry, I have added bird eye chillies for spiciness. I have already tried some vegetable side dish recipes like Punjabi Dum Aloo,Green Peas Masala,Mixed Vegetable Kuruma(with step by step photos). Ingredients
2 no of Potato
1 no of Carrot
2-3 no of green chillies
1/2 spn. of mustard seeds
1/4 spn. of turmeric powder
1 spn. of oil
2 strings of curry leaves
2-3 no of red chillies
Potato and Carrot Curry Preparation Steps
Step 01
Clean and wash potato and carrot. Cut in to cube shape.Step 02
Add salt and 1 cup of water. Pressure cook in medium flame for 5-6 whistle. Once it is done, mash well with a ladle.Step 03
Heat oil in a panStep 04
Splutter mustard seeds.Step 05
Add red chillies,sliced green chillies and curry leaves. Saute for a while.Step 06
Add turmeric powder and fry for 1/2 minute. Add mashed potato carrot mixture.Step 07
Add water if the gravy is too thick. Cover lid and cook for 2 minutes in low flame.Step 08
Serve hot with chapathi
