Mixed Vegetable Theeyal
Traditional kerala dish
Potato carrot theeyal recipe. Theeyal is one of the most popular traditional vegetarian side dish of Kerala. We used to make theeyal with shallots. I have already tried the recipe of Ulli theeyal which has richness of spices roasted along with the coconut. Here I tried another version of theeyal, mixed vegetable theeyal with carrot, potato, beans and roasted coconut. This theeyal goes well with rice, pickle and pappad. Usually theeyal tastes good for next day. So don’t forget to keep some for next day also 🙂 . Hope you all will like this potatao carrot theeyal recipe. Ingredients
2 no of Potatoes
3 no of Carrots
6 no of beans
1/2 on one coconut
1/6 spn. of fenugreek seeds
1/4 spn. of cumin seeds
1/2 spn. of chilli powder
1/2 spn. of coriander powder
1/4 spn. of turmeric powder
1/4 cup of tamarind juice.
Salt as required
To season
1/2 spn. of mustard seeds
3 no of red chillies
2 springs of curry leaves
2 no of finely chopped shallots(optional)
Oil for fry
Method
Step 01
Half cook carrots,beans and potatoes along with 1 cup of water,1/4 spn. of turmeric powder and salt.
Step 03
Mean time heat 1 spn. of oil in a pan.Add fenugreek seeds and cumin seeds.Saute for a while.
Step 05
Add grated coconut and 2 springs of curry leaves.Fry till golden brown color.
Step 07
Add chilli powder,turmeric powder and coriander powder.Fry for 1-2 minutes in low flame.
Step 08
Allow the mixture to cool and grind to fine smooth paste with 1 cup of water.
Step 09
Pour this mix to cooked vegetables and cook in low flame.(3-4 minutes)
Step 10
Add tamarind juice and allow the gravy to thicken.(Flame should be low).
Step 11
Heat 1 spn. of oil in another pan.Splutter mustard seeds.Add finely chopped shallots(optional), curry leaves,and red chillies.Fry for 1-2 minutes.
Step 12
Pour this seasoning over the curry and mix gently.Cover the lid for 2-3 minutes.Serve hot with rice.
Note :
1.You can use beans,beetroot etc… for making this theeyal.
