Delicious Pumpkin Cake in Pressure Cooker
Healthy pumpkin cake with whole wheat flour
Sponge cakes are so easy to make and requires no special ingredients. We can make sponge cakes with carrot,beetroot,dates etc…I have already posted some easy to make cake recipes like Easy Carrot Cake,Beetroot cake,Dates cake and Carrot cake with chocolate icing. All these three cakes are made in pressure cooker.
Pumpkin cake is very healthy and nutritious> I have already tried some pumpkin recipes like Pumpkin Kheer,Pumpkin Soup and Elissery(Pumpkin and Pea curry). I made this pumpkin cake using Multi grain atta. You can also use all purpose flour to get more fluffiness to the cake. Hope you all will try this easy healthy pumpkin cake
How to make Easy Pumpkin Cake
Ingredients
2 cup of Multi grain atta or (All purpose flour(maida))
1/2 cup of chopped pumpkin
2 no of eggs
3/4 cup of sugar
¾ cup of oil
1 spn. of baking powder
1/8 spn. of baking soda
1 pinch of salt
3 tbsp. of crushed badam or nuts
Method
Step 01
Grind pumpkin in a mixer grinder to a smooth batter.Step 02
Again grind the pumpkin puree along with oil,sugar,pinch of salt and eggs to smooth paste.Step 03
Take flour,baking soda and baking powder in a bowl. Mix well with handsStep 04
Sieve the flour mix twice.Step 05
Add pumpkin mixture and mix well.Step 06
Grind the batter for 2-3 minutes.Step 07
Grease cake tray with butter or ghee and pour the batter. Sprinkle crushed badam. Leave 1 inch free space.Step 08
Take pressure cooker and place a steel bowl inside.Step 09
Place the cake try carefully on the top of that bowlStep 10
Cook for 1 minute in high flame (Do not put weight while baking cake). Reduce the flame and bake for 50-60 minutes. Insert a toothpick at the center of cake and if it is comes out clean, cake is ready otherwise again cook for 5 more minutes.
