A healthy and nutritious ladoo with popped ragi,peanuts,coconut and palm jaggery
Ragi peanut laddu is a delicious and easy to make sweet dish with ragi/finger millet, roasted peanuts, grated coconut, and jaggery solution. It is a common traditional sweet of South India. Ragi is a very healthy and calcium-rich cereal that is good equally for both kids and adults. Peanuts are good sources of vitamin E, niacin, folate, and protein. For sweetness, I have used palm jaggery which is rich in essential minerals and a very good energy booster also. Usually, we make ragi ladoo with ragi flour. But here I tried a new method made laddu with popped ragi(dry roast the ragi in medium flame till it pops). This will give a nice aroma and crunchiness to the ladoo. A few days back I have posted popped ragi laddu which is also very tasty and easy to make sweet. How to make Ragi Laddu
Ingredients
2 cup of ragi
2 cup of peanuts
1 1/2 cup of coconut
250g of palm jaggery
Method
Step 01
Heat a nonstick pan and dry roast ragi till it pop (till most of the ragi balls started to pop like a popcorn). Fry in medium flame. Stir continuously. Do not take out hands. Remove from flame and allow to cool.
Step 02
In the same pan dry roast peanuts for 5 minutes. Allow to cool and crush it. Keep aside.
Step 03
Make jaggery solution ( 2 cups of jaggery powder 1 cup of water). Boil till the jaggery solution thickens (pal jaggery will not stick in your fingers).
Step 04
Powder popped ragi to smooth powder (we need to grind it for 3-4 times to get a fine powder). I used a small jar of mixer grinder.
Step 05
Take a large mixing bowl and add crushed peanuts and ragi powder. Add the hot palm jaggery solution little by little to the powdered ragi and mix well. Add coconut and mix well with hands. If you are able to make laddu, stop adding jaggery solution.
Step 06
Allow to cool for 2 minutes and soon make laddu from the mixture. This laddu will be a little crunchy am sure your kids will love this.
Step 07
Store in an airtight container.
