Roasted chicken is a famous recipe that is usually prepared in a home kitchen or rotisserie. This is an authentic French recipe and now famous in all parts of the world. Here I made this roasted chicken with Indian touch. The dish came out very well and the chicken was so soft and tender. I have used our spices for making them sour and spicy. This is absolutely easy to make dish which can be prepared within an hour and we required only a few ingredients. It is a perfect main course for any celebrations.

I have prepared a sauce for this roasted chicken which made the chicken more juicier. There is no need to marinate the recipe for long. You can also keep vegetables while roasting the chicken and believe me among the vegetables I kept, the roasted carrots were delicious. I have prepared hummus as a side dish. How to make roasted chicken?
Ingredients
- 1 Full chicken
- Butter - 100g
- 4 tbsp of Olive oil
- 2 spn of kashmiri chilli powder
- 1 spn of turmeric powder
- 1 spn of garlic powder
- 2 spn of parsley
- 2 spn of mixed herbs
- 1 Lemon
- Salt as required
- For sauce
- Chicken stock
- 4 tbsp of cornflour
- 1 spn of mixed herbs
Method
Step 1
Wash and clean chicken. Wipe clean the water content from the chicken with a cloth.
Step 2
Take a bowl. Add 2 spn of chilli powder, 1 spn of turmeric powder, 1 spn of garlic powder, 2 spn of mixed herbs and 2 spn of parsley in a bowl. Mix well and transfer 2 tbsp of the mix in another bowl (for marinating chicken skin).
Step 3
Make a marinade for the chicken skin. Take 100 g butter and divide it into half. Coat the butter with the smallest part of the spice mix which has kept aside.
Step 4
Fill the butter under chicken skin carefully.

Now make marinade for the other parts. Add olive oil in the remaining spice mix, add the juice of one lemon and rub on all parts of the chicken.
Step 6
Stuff one onion, 7 garlic, and squeezed lemon peel in the chicken. Tie the chicken with a thread.
Step 7
Marinate some vegetables like potatoes, carrots, and beans with the remaining marinade. Place everything in a baking tray, Preheat oven to 200 degrees and grill for 1 hour.

For making the Sauce

After one hour, take out the chicken from the baking tray and transfer the juice and stuffed onion, garlic, and lemon to another bowl.
Step 10
Pour the juice into a pan, add 2 spn of cornflour, 1 spn of mixed herbs. Bring to boil and cook till the sauce thickens. The sauce is ready.
Step 11
Pour the sauce over chicken pieces while serving.

How to make Hummus
250g of boiled chickpeas
100g of white sesame seeds (ellu)
4 cloves of garlic
1 spn. of lime juice
2 spn. of olive oil
Salt as required

Step 01
Place all the ingredients in a food processor or mixer grinder and process till smooth.
