Famous Traditional south india vegetable soup
1/2 kg of Vegetables
100 g of Daal
2 no of Tomato
1 no of Onion
1 cup of Tamarind juice(from a lemon sized tamarind)
1 spn. of Turmeric powder
2 spn. of Red Chilly powder
1 1/2 spn. of Coriander powder
1/6 spn. of cumin powder(Optional)
1/8 spn. of Fenugreek powder
3 no of Finely chopped small onion(Shallots)
1 spn. of Oil
1/4 spn. of Asofetida
1 spn. of Mustard seeds
1 spn. of Cumin seeds(optional)
4 no of Red chilli
2 springs of Curry leaves
Salt as required
Wash and cut the vegetables in to medium 3 inch pieces
Pressure cook dal along with vegetables(except ladies finger and drumstick),chopped tomato,onion,turmeric powder and salt.
Add tamarind juice,ladies finger and asofoetida. Cook again till 1 whistle.
Heat oil in a pan.Splutter mustard seeds,cumin seeds,dal,red chilli,finely chopped coriander leaves and curry leaves.
Add finely chopped small onion and saute for 1 min.
Add turmeric powder,chilly powder,coriander powder and cumin powder and fenugreek powder(or you can use sambar powder(2 S)) saute for 1 min.
Add this seasoning to the curry.Add salt if needed.Cover the lid and cook for 5 min
Instant sambar is now ready to serve.
