Vegetable Pulao – How to make vegetable pulao
Healthy vegetable pulao recipe.
Vegetable pulao is a very easy to make one pot meal. Compared to other rice dishes, pulao is more healthy because we can add lots of vegetables. I have also added soya chunks which makes this dish protein rich. You can also add dry fruits like raisins,nuts,badam etc… Normally in pulao we cook rice along with vegetables and masala. I would like to share some of my healthy rice like

Cleanse the Body.
1 cup of rice(sona masoori,biryani rice,jeera rice etc…)
1 no of onion
1 spn. of ginger garlic green chilli paste
2 no of tomato
1/2 cup of corn
1/2 cup of chopped carrots
1/2 cup of peas
1 cup of soya chunks
1 tbsp of chopped onion
2 no of cinnamon sticks
1 no of cardamom
2 no of cloves
1/2 spn. of pepper
1 tbsp. of lemon juice
1 spn. of butter/ghee
salt as required
Step 01Wash and soak rice in water for 15 minutes. Drain it and keep aside.
Step 02Soak soya chunks in warm water for 5 minutes. Squeeze out the water and keep aside. (you can check the link for how to cook soya chunks)
Step 03Heat butter/ghee in a pressure cooker or pan.
Step 04Add chopped onion,cinnamon sticks,cardamom and cloves. Add ginger garlic paste and saute till raw smell goes off.
Step 05Add chopped tomatoes and cook till tomatoes become mushy.
Step 06Add pepper powder and fry for a while.
Step 07Add chopped vegetables,salt,soya chunks and saute for 1-2 minutes.
Step 08Add soaked rice and fry for 1 minute.
Step 09Add water (for one cup of rice add 1 1/2 cup of water). Add salt and 1 tbsp. of lemon juice.
Step 10Cover the lid and cook for 1 whistle in medium flame. Open the lid only after 5-7 minutes.
1.You can add any vegetables of your wish like cauliflower,potato,beans etc…
2.Adding fried soya chunks will make the pualo more tasty.
3.You can also make this pulao without crushed ginger and garlic.
