vegetable stew is a traditional side dish in kerala we used to have in break fast with appam,dosa,chappathi etc…
Ingredients
1 cup of Carrot Chopped
1 cup of Chopped beans
1 cup of Chopped potato
1 cup of Chopped cauli flower
1 cup of Green peas
1 cup of Coconut milk(Onnam paal)
2 cup of Coconut milk(Randam paal)
3 piece of Cinnamon
2 piece of Cloves
10 no of Nuts
1/2 spn. of Pepper powder
Salt as required
1 spn. of mustard seeds
1 spn. of coconut oil
Method
Step 01
Chop all the vegetables and pressure cook till 2 whistle in low flame with cinammon,cloves,pepper powder,salt and coconut milk(randam paal).
Step 02
Grind nuts with little water and keep aside.
Step 03
When vegetables get cooked,just mash it using a laddle.
Step 04
Add coconut milk(onnam paal) and nuts paste just keep in flame for 1/2 minute.Remove from flame.
Step 05
Add coconut oil and mix well.cover lid of the pan and keep for some time
Step 06
Goes well with Vellappam,Appam.etc..
