Delicious and spongy cake with jam and coconut
Jame cake recipe. Sponge cakes are so easy to make and requires no special ingredients. I made this cake with jam and grated coconut topping which makes this cake spongy inside and goodness of jam coconut mix outside. We can also make sponge cakes with carrot,beetroot,dates,milk etc… I have already posted some easy to make cake recipes like Easy Carrot Cake,Beetroot cake ,Carrot cake with chocolate icing,dates cake,banana walnut cake,milk cake and marble cake. All these cakes are made in pressure cooker. I made most of this cakes with whole wheat. You can also make these cakes with plain flour also.
How to make Jam Cake

Ingredients
2 cup of All purpose flour(maida)
1/4 ltr of milk
3 no of eggs
3 tbsp. cup of sugar
2 spn. of vanilla essence
3/4 cup of oil
1 spn. of baking powder
1 pinch of salt
For jam topping
2 spn. of butter
2 tbsp. of jam
2 tbsp. of grated coconut
1 spn. of sugar
Method
Step 01
Beat/grind milk along with oil,sugar and eggs to smooth paste.Step 03
Take all purpose flour,pinch of salt and baking powder in a bowl. Mix well.Step 04
Sieve the flour mix twice.Step 05
Add the beaten batter and mix well.(Add milk if needed to get the thick pouring batter consistency)Step 06
Add vanilla essence and beat/Grind the batter for 2-3 minutes.Step 07
Grease cake tray with butter or ghee and pour the batter. Leave 1 inch free space.Step 08
Take pressure cooker and place a steel bowl inside.Step 09
Place the cake try carefully on the top of that bowlStep 10
Cook for 1 minute in high flame (Do not put weight/whistle while baking cake). Reduce the flame and bake for 50-60 minutes. Insert a toothpick at the center of cake and if it is comes out clean, cake is ready otherwise again cook for 5 more minutes.Step 11
If the cake is ready start to make jam topping. Heat butter in a pan. Add jam and mix well with a spoon to get a thick paste(low flame). Spread the jam mix on top of the cake. Sprinkle grated coconut and sugar on top of that. You can also slice the cake and spread the jam coconut mixture in between. Serve after 5 minutes.
