Healthy and delicious kheer with pumpkin


Pumpkin kheer is very healthy and yummy dessert made with pumpkin. It is a traditional sweet dish of festival time. Pumpkin is very nutritious and healthy vegetable which is available in the market at its best price. It is a best nutrient food which contains lots of vitamins and minerals but low calorie. Pumpkin reduces the risk of heart problems, obesity, blood pressure etc…Pumpkin is the best known source of antioxidants which prevents certain types of cancer.

We make lots of dishes with pumpkin like sambar, poriyal, erissery etc. . In my childhood my mom used to make simple payasam with pumpkin, cowpea (unakkapayar) and jaggery. She just cook these three ingredients together and add grated coconut while serving. It tastes so delicious and sometimes I also make this for my family. Today I have shared a simple kheer recipe with pumpkin puree.

Pumpkin kheer Preparation Method

Ingredients

  • 250 grams of Pumpkin
  • 1/2 cup of thick Coconut Milk(onnam paal)
  • 1 cup of thin Coconut Milk(randam paal)
  • 150 grams of Jaggery
  • Cashew nuts
  • Kismis(Raisins)
  • 1 pinch of Salt
  • 1 spn. of Ghee

Method


Step 01

Pressure cook pumpkin for 10 min in medium flame.

Step 02

Grind pumpkin and keep it aside.

Step 03

Make thick jaggery solution with 1/2 cup of water.Add Pumpkin puree and cook for 5-7 minutes

Step 04

Stir continuously.

Step 05

Add think coconut milk and stir well for 3-4 minutes.

Step 05

Add thick coconut milk and cardamom powder.Stir well. When it starts to boil remove from flame.

Step 06

Add a pinch of salt (Optional..which gives you a different taste).

Step 06

Add fried cashew and kismis along with the ghee.
