Easy cilantro rice recipe with coriander leaves and grated coconut. Rice mixed with vegetables and leaves is a very common dish in Indian cuisine like tomato rice, cauliflower rice, pineapple rice etc…
I came to know about this rice from my friend who is from Tamil Nadu. They call it as malliyila sadam. She prepared it for me when I visited her house. It was a wonderful lunch. perfect aroma of the coriander leaves, green chillies and coconut was nicely blended in the rice.
Tamil Nadu rice varieties have a unique aroma and taste because of the spices they use. Tried the rice on a weekend and it came out very well. I have also added fried potatoes as topping.
Coriander or cilantro is a good source of dietary fiber, manganese, iron, vitamin C, vitamin K and protein. We can also make chutney with cilantro.

how to make coriander rice ?
Ingredients
2 cup of of pulao rice/biryani rice/sona masoori
2 cup of chopped coriander leaves
2 large no of potatoes(optional)
1 no large onion
1 small piece of ginger
3 no of garlic cloves
1 cup of grated coconut
3 no of green chillies
1 tbsp. of lemon juice
Whole spices
1 spoon. of fennel seeds
3 piece of bay leaves
2 no of cinnamon sticks
Method
Step 01
Wash and soak rice in water for 15 minutes.
Step 02
Wash and cut potatoes in cube shape and shallow fry. keep aside.
Step 03
Gently crush grated coconut along with coriander leaves, green chillies, garlic and ginger. Keep aside.
Step 04
Heat oil in a pan. Add all the ingredients mentioned under whole spices. Fry till they become fragrant.
Step 05
Add sliced onion and fry till it become golden brown color.
Step 06
Add crushed mix and fry for 2-3 minutes.
Step 07
Add soaked rice and mix well. Add lemon juice and salt. Mix well and fry for 2-3 minutes.
Step 08
Add water (for 1 glass of rice I used 1 1/2 glass of water)
Step 09
Cover lid and cook for 15 minutes. (You can also cook in pressure cooker. Up to 2 whistle in medium flame)
Step 10
Add fried potatoes and mix well. Serve hot with raita.
