Easy to make Brazilian Carrot Cake in Pressure Cooker
Delicious spongy Brazilian Carrot Cake prepared without oven. Carrot cake is a soft and simple cake with the goodness of carrot. Actually this Brazilian carrot cake is an inevitable part of Portuguese cuisine. They usually make this cake with chocolate icing but here I made it simple. If you are baking in oven, bake for 30 minutes in 180 degree Celsius.

Ingredients
2 cup of All purpose flour(maida)
2 no of medium carrots
2 no of eggs
1 cup of sugar
¾ cup of oil
1 spoon. of baking powder
Method
Step 01
Cleans and wash carrots. Chop in to small piecesStep 02
Grind carrots along with oil, sugar and eggs to smooth paste.Step 03
Take all purpose flour and baking powder in a bowl. Mix well with handsStep 04
Sieve the flour mix twice.Step 05
Add carrot mix and mix well.Step 06
Grind the batter for 2-3 minutes.Step 07
Grease cake tray with butter or ghee and pour the batter. Leave 1 inch free space.Step 08
Take pressure cooker and place a steel bowl inside.Step 09
Place the cake try carefully on the top of that bowlStep 10
Cook for 1 minute in high flame (Do not put weight while baking cake). Reduce the flame and bake for 30-40 minutes. Insert a toothpick at the center of cake and if it is comes out clean, cake is ready otherwise again cook for 5 more minutes.
